J-Co's here

Inspired by J-Co's Donuts we bought last week. The texture's so soft & moist. And last night was my first time serving this snack for my dearest family. I used to ignore my mom when she prepared to make the dough. Now, with my own creation I have to prove my family that I can do a lil' thing that mom used to do. So..... watch out, mom! I'm back!!!love28

Ingredients : (makes 20 medium donuts)
A :
100 gr all purpose flour
100 gr sugar
3 tsp instant yeast
200 ml water

B :
250 gr all purpose flour
30 gr milk powder
1/2 tsp salt
2 tbsp butter /shortening
1 large egg
50 gr flour for dusting

Method :
In a large bowl, combine ingredients A until well combine.
Cover with plastic wrap and set aside for about 1 hour. Or until double in size.
Gradually add in ingredients B into dough.
Mix the dough using mixer with hook attachment a few minutes.
Prepare your kneading surface by spreading a few tablespoons of flour on a smooth surface.
Put the dough in the middle of the flour and sprinkle a little flour on top and on your hands.
Knead the dough a few times.
Once the dough has been kneaded, spread it out to be 1 cm (a half inch) thick or with a rolling pin.
Now it is time to cut out the donuts. (I used a medium donut cutter to make 20-22 pieces)
Place the donuts on a floured pan to let rise as we get the oil ready (about 10 minutes).
Fried the donuts with low heat until golden brown on each side.
Allow the donuts to cool on a rack or on some paper so that the oil soaks off.
Then flavoring the donuts with fave glazes we desire.
Now we are ready to enjoy these donuts.

We had stumbled upon perfection. It involves only 7 ingredients that most everyone has in their pantries. And the donuts are sooo moist that they taste just as good the second day if they even last that long. Hey, mum... the recipe costs lest than a dollar to make!

Roti Bluder

Project dari Ibu Guru-nya ponakan. Gak pernah bikin, kepaksa resepnya ngadopsi dari NCC. Dengan sedikit modifikasi tentunya.

Bahan A:

17 btr kuning telur (pake 8 telur utuh, yang 2 diilangin putihnya)

2 btr putih telur (aku skip)

600 gr tepung terigu protein tinggi

2 sdm ragi instant

½ sdm bread improver

150 gr gula pasir

150 ml susu dingin

Bahan B:

150 gr mentega (kuganti margarine)

1 sdt garam

Bahan Isi (optional):

Dark cooking chocolate, serut
Keju chedar, parut
Butter, potong-potong, simpan di freezer

adonan setelah 45-60 menit (loyang atas)
adonan setelah 30 menit (
loyang bawah)


Cara membuat:

- Kocok telur dan gula pasir hingga kental, tuang kedalam bahan kering lainnya uleni hingga rata, tuangi bahan B, uleni terus hingga kalis. Istirahatkan selama 1 jam.

- Bagi adonan menjadi 30 grm, bulatkan, istirahatkan 10 menit, pipihkan & isi, lalu bentuk dan taruh dalam cetakan bluder dari kertas. Biarkan mengembang selama lk. 30 menit.

- Poles dengan campuran telur dan susu (2 btr telur, dan 2 sdm susu, kocok lepas), taburi atasnya dengan keju parut, lalu oven selama 20 menit, dengan suhu 180C.

Grilled Pizzas

I saw my neighbour cleaning the grill after their daughter's Bday party last Ramadhan. Sudennly I got an idea to grill my remained pizza dough. Here I used Jamie's Pizza Dough (sorry, can't remember the link).

Ingredients :
· 1 kg strong white bread flour
·
1 level tbsp fine sea salt
·
15 gr dried yeast
· 1 tbsp golden caster sugar
· 4 tbsp extra virgin olive oil
· 650 ml lukewarm water (I just used 500 ml)


Directions :

1. Sieve the flour and salt on to a clean work surface and make a well in the middle.

2. In a jug, mix the yeast, sugar and olive oil into the water and leave for a few minutes, then pour into the well.

3. Using a fork, bring the flour in gradually from the sides and swirl it into the liquid. Keep mixing, drawing larger amounts of flour in, and when it all starts to come together, work the rest of the flour in with your clean, flour-dusted hands. Knead until you have a smooth, springy dough.

4. Place the ball of dough in a large flour-dusted bowl and flour the top of it. Cover the bowl with a damp cloth and place in a warm room for about an hour until the dough has doubled in size.

5. Now remove the dough to a flour-dusted surface and knead it around a bit to push the air out with your hands (*this is called knocking back the dough). You can either use it immediately, or keep it, wrapped in clingfilm, in the fridge (or freezer) until required. If using straight away, divide the dough up into as many little balls as you want to make pizzas – this amount of dough is enough to make about six to eight medium pizzas.

6. Timing-wise, it’s a good idea to roll the pizzas out about 15 to 20 minutes before you want to cook them. Don’t roll them out and leave them hanging around for a few hours, though – if you are working in advance like this it’s better to leave your dough, covered with clingfilm, in the fridge. However, if you want to get them rolled out so there’s one less thing to do when your guests are round, simply roll the dough out into rough circles, about 0.5cm thick, and place them on slightly larger pieces of olive-oil-rubbed and flour-dusted tinfoil. You can then stack the pizzas, cover them with clingfilm, and pop them into the fridge.





Note :
Just grill about 10 minutes in low heat until the cheese bubbling or the edge becomes golden brown. Do not forget to cover the top of your pizza pan using it cap or aluminium foil.

Topping (optional) :
· Marinara sauce
·
Smoked beef / chicken, or canned tuna
·
sliced tomatoes
· cheddar or parmesan cheese
· mozzarella cheese

Basic Marina Sauce :
· 1 tbsp olive oil
·
2 garlic cloves, peeled & minced
·
1 medium onion,coarsely chopped or thinly sliced
· 3-4 tomatoes, diced
· 1 can tomato puree or tomato paste
· 1/2 tsp dried oregano
· 1/2 tsp dried basil
· 1/2 tsp seasoning
· pinch of sugar
· salt & pepper (optional)

Mexican Buns


Ok, some of you know it and others might have guessed, but I'm one of those insanely busy people who rarely sits down for a proper breakfast, certainly not on the week days. That's why in my fridge, you'll see breakfast buns like this in a plastic container, waiting to be heated up in the morning.
If you're someone who sits at the table and has a relaxed breakfast, I do envy you. And you might picture your breakfast stuffs more like this. However you're imagining they might fit into your life, these breakfast stuffs are just delicious.

Ingredients :
600 gr purpose flour
120 gr sugar
15 gr dry yeast
1 tsp bread improver
4 eggs yolk
250 ml iced water
100 gr butter
1/2 tsp salt

Filling :
cubed frozen butter

Topping :
1 large egg
40 gr fine sugar
40 gr palm suiker
100 gr salted butter
1 tsp instant coffee, add a tbsp hot water
1 tsp mocha paste

Instruction :

· In the mixing bowl of an electric mixer, stir together flour, sugar, yeast & bread improver.

· Gradualy add egg yolks & iced water. Mix & stir together with dry ingredients on low speed with a dough hook. Then add butter & salt, mix thoroughly until smooth. It will bubble almost immediately.

· Place dough in an oiled bowl, and turn to coat the surface. Cover with a damp cloth. Let rise in a warm spot for 30 minutes, or until doubled in size.

· Punch down the dough. Weigh dough into 50 grams per piece. Fill with cubed frozen butter. Shape rounds, and place in greased pans. Let rise until dough is 2.5 inches, usually 1 hour. Then spread with topping.

· Bake at 350 degrees F ( 175 degrees C) for 20 minutes, or until tops are browned. Let warm in pans for 5 minutes, and then turn out onto plate. Now it's ready to enjoy with a cup of tea.

Assorted Buns

Ini lebih tepatnya resep untuk bikin roti tawar. Tapi karena pengennya langsung bisa dimakan tanpa oles sana-sini & ditoast kesana kemari... jadilah gulanya ditambah biar jadi roti manis sekalian. Ga tau knapa.. ini pertama kali aku bikin bread & asal nyemplung aja, tapi hasilnya lumayan smooth (*katakuihikhik) mirip-mirip Roti Taiwan gitu dweeh! (hehe hee ketauan ngibulnya kalo yg ini) Dan satu lagi yang kusuka... "Egg Free!" (secara di Indo harga sembako pada meroket!nangih)



Ingredients :

300 gr whole wheat flour
200 gr quick cooking oats
11 gr (1 sachet) instant yeast
100 gr sugar
275 ml fresh milk
60 gr butter / margarine
a pinch of salt

Filling :

Choco block + cheese spread, softened
Beef sausages + chili sauce

Spread :

1 tbsp butter / margarin, melted
1 tbsp milk powder
1 tbsp water

Directions :

· In a large bowl, combine flour, oats, yeast, & sugar. Mix thoroughly.

· Gradually add fresh milk, mix thoroughly together with margarine & salt until smooth. (Or, add all ingredients to bread machine pan in order recommended by the manufacturer). Place dough in a greased bowl, and turn several times to coat. Cover with a damp cloth. Allow to rise until doubled.

· Punch down the dough, let it rest a few minutes. Divide dough into 40 grams each parts. Fill each dough with choco cheese spread or chilli sausages.

· Place in greased bun / sweet bread pans. Let sponge rise until almost doubled in size (60-75 minutes). Spread with combined melted margarine, milk powder & water.

· Bake at 170 deg.C for 20 minutes. The loaves may need to be covered for the last few minutes with foil to prevent excess browning.
