Chewy Brownie Peanut Butter Chip Cookies

I have been making chocolate chip cookies lately. I made one recipe two weeks ago, and then last week, and another last night. I have always struggled with baking. For the first three years I was married, and striving to be a successful homemaker, I never made what I would consider a successful batch of cookies. Never know what the problems are. 'Til I asked my friend to send me her cookie recipe, I still had no confidence to try it.
In fact the recipe was great! (Thank you so much, sistah!) This is the cookies I love. So crispy & yummeee...! makan Not too chewy I guess. Now I want to share it with you all!

A few minutes later out comes the warm and gooey chocolate chip cookies (2nd batter)

Chewy Brownie Peanut Butter Chip Cookies
2 cups all purpose flour
2/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup butter
1 cup sugar
2/3 cup brown sugar
2 large eggs
1 tsp vanilla extract
1 1/2 cups peanut butter chips
(changed with choco chips & coarsely chopped pistachios)

- Preheat oven to 350F and line a baking sheet with parchment paper.
- In a medium mixing bowl, whisk together flour, cocoa powder, baking soda and salt
- In a large mixing bowl, cream together butter and sugars until fluffy. Beat in the eggs and vanilla. With the mixer on low, beat in the flour mixture, scraping the sides of the bowl as necessary, and continue to beat until all of the dry mix has been incorporated. Do this slowly to avoid dusting your kitchen with flour and cocoa. Stir in chips and/or peanut butter cups by hand.
- Drop dough by rounded tablespoons onto the prepared baking sheet (dough balls were a bit larger than 1 inch in diameter). Leave about 2 to 3-inches between cookies to allow for spread.
- Bake for 9-11 minutes, until cookies are set at the edges and tops are slightly cracked looking. Cool on baking sheet for 5-10 minutes, until firm enough to transfer to a cooling rack.
- Cool completely before storing in an airtight container.


Makes about 4 dozen.

Black Pepper Beef

Ingredients :
400 grams tender beef strips (sukiyaki beef)
100 grams (or 1 can) mushroom, thinly sliced
1 onion, thinly sliced
1 medium green bell pepper, chopped into wedges
1 medium red bell pepper, chopped into wedges
2 tbsp finely chopped garlic & ginger
cornstarch & water to thicken stir-fry

Marinade For Beef (about a tbsp of each)
dark soy sauce
oyster sauce
fish sauce
black pepper sauce
sweet soy sauce (kecap manis)
minced garlic
fresh ground black pepper
sugar
1/2 cup water

Direction :
  1. In a bowl combine beef strips and marinade and mix together so beef is well coated and leave in fridge to marinade for about 20-30 minutes.
  2. Prepare the wok/pan and add in some vegetable oil and let the wok heat up. Then toss the garlic & onion. Let that sizzle for a few seconds before adding the beef, mushrooms, red & green bell peppers, stir to make sure the meat is evenly cooked through.
  3. Now add in fresh ground black pepper and stir occasionaly. I like this point, it gives the dish a bit more kick. Finally add the cornstarch mixture to thicken the stirfry.
  4. Serve with hot rice.

Cup Brokoli Panggang

Lagi pengen cemilan dari kentaaaang! Yang ini resepnya copas dari Bu RT....!

Bahan :
- 7 btr. kentang ukuran sedang, rebus dan haluskan bersama 2 sdm. mentega.
- 2 buah wortel, kupas dan potong2 dadu (kecil).
- 150 gr. brokoli, cuci bersih dan petik2 per batang.
- 1 btr. telur ayam.
- 3 sdm. tepung terigu + 2 sdm. maizena.
- Daun bawang dan seledri secukupnya, iris halus.
- Keju parut secukupnya, untuk taburan diatas.
- 200 ml. susu cair.
- Minyak goreng secukupnya untuk mengoles.

Bumbu :
- 2 siung bawang putih
- 3 siung bawang merah
- 1/2 sdt. lada bubuk & pala bubuk
- 1 sdt. garam halus
- 1 sdt. kaldu sapi instant / bumbu lain sesuai selera.
- 1 sdm. minyak goreng untuk menumis.

Cara membuat :
1. Campur kentang yang telah dihaluskan dengan susu cair, telur ayam, wortel, seledri dan daun bawang hingga rata. Masukkan kemudian terigu dan maizena aduk kuat hingga rata. Sisihkan.
2. Sementara itu haluskan kedua macam bawang kemudian tumis hingga harum, angkat dan tuangkan kedalam adonan kentang tadi, aduk hingga rata. Masukkan sisa bumbu yang lain sambil terus aduk hingga rata. Siapkan cetakan cup dan olesi masing2 cetakan dengan minyak goreng.
3. Tuangkan adonan secukupnya dalam cetakan dan selipkan 1 batang brokoli pada bagian tengah adonan dan taburi parutan keju diatasnya, begitu seterusnya hingga adonan habis. Panggang dalam oven 180° temperatur, hingga matang kecoklatan.
4. Hidangkan brokoli panggang ini bersama ketimun dan cabe rawit atau mayonese sebagai pelengkap.


Note :
- kentang sengaja tidak kuhancurin sampe halus,
- volume susu tetap, tapi kubikin lebih kental... biar lebih yum-yum
- sebelumnya brokoli kucelup ke air panas / mendidih beberapa detik, biar agak setengah matang & nantinya waktu dipanggang tetep ijo & gak kering.
- boleh juga campurin jamur campignon yang udah dicuci bersih & dicincang kasar

Grilled Pizzas

I saw my neighbour cleaning the grill after their daughter's Bday party last Ramadhan. Sudennly I got an idea to grill my remained pizza dough. Here I used Jamie's Pizza Dough (sorry, can't remember the link).

Ingredients :
· 1 kg strong white bread flour
·
1 level tbsp fine sea salt
·
15 gr dried yeast
· 1 tbsp golden caster sugar
· 4 tbsp extra virgin olive oil
· 650 ml lukewarm water (I just used 500 ml)


Directions :

1. Sieve the flour and salt on to a clean work surface and make a well in the middle.

2. In a jug, mix the yeast, sugar and olive oil into the water and leave for a few minutes, then pour into the well.

3. Using a fork, bring the flour in gradually from the sides and swirl it into the liquid. Keep mixing, drawing larger amounts of flour in, and when it all starts to come together, work the rest of the flour in with your clean, flour-dusted hands. Knead until you have a smooth, springy dough.

4. Place the ball of dough in a large flour-dusted bowl and flour the top of it. Cover the bowl with a damp cloth and place in a warm room for about an hour until the dough has doubled in size.

5. Now remove the dough to a flour-dusted surface and knead it around a bit to push the air out with your hands (*this is called knocking back the dough). You can either use it immediately, or keep it, wrapped in clingfilm, in the fridge (or freezer) until required. If using straight away, divide the dough up into as many little balls as you want to make pizzas – this amount of dough is enough to make about six to eight medium pizzas.

6. Timing-wise, it’s a good idea to roll the pizzas out about 15 to 20 minutes before you want to cook them. Don’t roll them out and leave them hanging around for a few hours, though – if you are working in advance like this it’s better to leave your dough, covered with clingfilm, in the fridge. However, if you want to get them rolled out so there’s one less thing to do when your guests are round, simply roll the dough out into rough circles, about 0.5cm thick, and place them on slightly larger pieces of olive-oil-rubbed and flour-dusted tinfoil. You can then stack the pizzas, cover them with clingfilm, and pop them into the fridge.





Note :
Just grill about 10 minutes in low heat until the cheese bubbling or the edge becomes golden brown. Do not forget to cover the top of your pizza pan using it cap or aluminium foil.

Topping (optional) :
· Marinara sauce
·
Smoked beef / chicken, or canned tuna
·
sliced tomatoes
· cheddar or parmesan cheese
· mozzarella cheese

Basic Marina Sauce :
· 1 tbsp olive oil
·
2 garlic cloves, peeled & minced
·
1 medium onion,coarsely chopped or thinly sliced
· 3-4 tomatoes, diced
· 1 can tomato puree or tomato paste
· 1/2 tsp dried oregano
· 1/2 tsp dried basil
· 1/2 tsp seasoning
· pinch of sugar
· salt & pepper (optional)

Menu Putus Asa

Abis lebaran tinggal capeknya doank, masih males masak yang neko-neko. Apalagi selama bulan Ramadhan & Lebaran kemarin kita sudah dimanjakan sama berbagai hidanganeskrim yang bikin tubuh tambah melar... olalaa!tolong

Beberapa hari ini kita lagi ga ada mood ke arah makanan. Sampe-sampe namanya makan cuman buat sekedar nurutin kebutuhan, bukan selera. Sarapan tetep wajib. Hari ini pilihan jatuh ke telur ceplok plus french toast.makan
Toast us first, sweety..

Orang lain biasanya rotinya di-toast dulu baru dioles butter. Kalo aku lebih suka kebalikannya. Yang ini buat bapak'e tole, jadi ngoles butternya tidak ala aku. Sedangkan aku sendiri pilih telur rebus ini aja deh.. musti telur ayam kampung yah!
